South African confectioners’ sugar is always made with cornstarch. Cornstarch is a starch made from corn that’s used to prevent clumping in the sugar, and it’s also great for baking because it dissolves easily.

To make confectioners’ sugar, granulated sugar is mixed with cornstarch in a 1:1 ratio by weight. This mixture can then be ground into powder using a blender or food processor. It’s important that you don’t use too much liquid when grinding the mixture; otherwise, you’ll end up with more of a paste than actually powdered sugar! Also note that some brands add other ingredients such as flavourings and preservatives—if you want pure confectioners’ sugar with no added ingredients (including natural ones like vanilla), look for labels that say “pure” or “natural.”
