What Is Cornmeal?

The meal (coarse flour), known as cornmeal, is made from dried corn. It is an essential everyday meal that can be processed to coarse, medium, or fine textures—but not quite as refined as wheat flour. Corn flour is the name given to very finely ground cornmeal in Mexico. It is termed masa harina (or masa flour) when fine cornmeal is produced from corn that has been soaked in an alkaline solution, such as limewater (a process known as nixtamalization), and it is used to make arepas, tamales, and tortillas. Polenta, or boiled cornmeal, is a traditional dish and bread alternative in Romania and Italy.

The Several Varieties Of Cornmeal Include:

  • Light blue or violet describes the color of blue cornmeal. It has a pleasant flavor and is made from whole-blue corn kernels. The dried maize kernels that make up the cornmeal were ground to a fine or medium texture.
  • The husk and germ of the maize kernel are almost entirely removed from steel-ground yellow cornmeal, which is prevalent mostly in the United States. It can be preserved for roughly a year if kept in an airtight container and in a cool, dry location.
  • With some of the hull and germ still present, stone-ground cornmeal gives dishes a bit more taste and nutrients. It is more perishable, but if refrigerated, it will last longer. However, if kept in a moderately cool location, it too can have a shelf life of many months.
  • In some parts of Africa, white cornmeal, or mielie-meal, is more prevalent. For producing cornbread, it is very well-liked in the Southern United States.
